With everything you love about lasagna and healthy baby spinach, this dish will be a crowd pleaser.
Preheat the oven to 350F
In a medium sized non-stick pan heat the oil and add in the ground beef.
In a blender, blend half the diced tomatoes and set aside.
Break up the beef while cooking. Once no more pink is visible, add in the chili powder and the salt and stir in.
Add in the pureed tomatoes and the remaining tomatoes and cook sauce for 10 minutes. Set aside.
Place a thin layer of sauce on the bottom of a 7 x 11 baking dish.
Layer in this order: noodles, meat sauce, spinach, Black Diamond® Italiano Shredded cheese, noodles, meat sauce, spinach, cheese, noodles, meat sauce, spinach, cheese, noodles, sauce, cheese.
Lay out tin foil to cover the dish and spray one side with cooking spray. Cover the baking dish, with the sprayed tin foil side on top of the cheese.
Bake in the oven for an hour. Remove tin foil and finish baking for another 20 minutes.
Let cool slightly and serve.
