Favourite Vegetable Rotini Italiano (Illustration)

A great Rotini recipe with the old world Italiano taste.

Vegetable Rotini Italiano

  • 12 oz rotini pasta
  • 4 cups frozen mixed vegetables
  • 14 oz can of tomato sauce
  • 1 cup evaporated milk
  • 1½ cups Black Diamond Shredded Part Skim Mozzarella
  • 1 tsp oregano
  • ¼ tsp pepper
  • Black Diamond Shredded Parmesan Romano to taste
  1. Cook pasta in large pot of boiling salted water for 8 minutes or until just tender.
  2. Add frozen vegetables and cook for 2 minutes longer. Drain well and return to pot.
  3. In another saucepan, stir together tomato sauce, milk, 1½ cups of Black Diamond Shredded Part Skim Mozzarella, and seasonings; cook over medium heat, stirring often, until cheese melts, about 3-5 minutes.
  4. Add sauce to pasta mixture and toss to coat.
  5. Serve immediately, sprinkled with Black Diamond Shredded Parmesan Romano.
