Simmered Mexican Spice Chicken

Ingredients
  • 1 cup vegetable oil
  • 4 boneless, skinless chicken breast halves
  • 1 jar spicy salsa
  • ¼ tsp water
  • 1 tsp frozen niblets whole kernel corn
  • ¼ tsp green onion, chopped
  • 1 tsp Black Diamond Mozzarella, shredded
Preparation
    null
    1. Heat oil in skillet over medium-high heat; brown chicken 2 minutes per side.
    2. Reduce heat to medium-low; stir in spicy salsa and water and simmer for 8-10 minutes until done.
    3. Stir in corn and green onion and heat through.
    4. Transfer chicken breasts to serving plates.
    5. Spoon salsa mixture over chicken breasts, sprinkle with Black Diamond Mozzarella and let stand just until cheese melts.
    6. Serve over hot cooked rice or pasta.
