Favourite Shrimp and Green Chili Quesadillas (Illustration)

Add a seafood twist to a classic to get a quesadilla de mer.

Shrimp and Green Chili Quesadillas

Ingredients
  • 2 tbsp vegetable oil, divided
  • 8 7” flour tortillas
  • 1¾ cups Black Diamond Shredded Sharp Cheddar
  • 1 cup small or coarsely chopped cooked shrimp
  • 1 4 oz can chopped green chilis, drained
  • ¼ cup cilantro (chopped) or thinly sliced green onions
Preparation
  1. Preheat oven to 450°F.
  2. Brush 1 tbsp oil over 4 of the tortillas. Place oiled sides down on cookie sheet.
  3. Combine Black Diamond Shredded Sharp Cheddar, shrimp, green chilies, and cilantro (or green onions) and spoon evenly over the tortillas.
  4. Bake for 6 minutes or until golden brown. Use a large spatula to turn quesadillas over and continue baking until tops are golden brown, about another 2 minutes. Cut quesadillas into quarters.
