Favourite Roasted Jalapeno Jack Dip (Illustration)

Roasted Jalapeno Jack Dip

Ingredients
  • 2 or 3 large jalapenos chili peppers
  • 3 tbsp Lactantia salted butter
  • 3 tbsp flour
  • 1½ cups Beatrice 2% milk
  • 2 cups Black Diamond Monterey Jack, shredded
  • ½ cup tomatoes, seeded and finely chopped
  • 2 green onions, finely chopped
  • 2 tbsp cilantro, chopped
Preparation
  1. Quarter chilies lengthwise, discarding stems and seeds (wear rubber gloves when handling chilies and avoid touching your eyes). Place chilies skin side up on rack of broiler pan. Broil about 2 inches from source of heat until skins become blistered and charred. Cover and leave them to cool. Peel off and discard skins then chop the chilies finely.
  2. Melt the butter in medium saucepan. Once liquid, blend in the flour. Gradually stir in the milk stirring constantly. Cook and stir over medium heat until mixture boils and thickens. Remove from heat. Add Black Diamond Monterey Jack cheese and stir until totally melted. Add chilies, tomato, onions, and cilantro; mix well.
