Norwegian Cheddar Pancakes with Warm Honey Butter

Ingredients
  • 2 cups Black Diamond Medium Cheddar
  • 1½ cups all purpose flour
  • 2 tsp sugar
  • ¾ tsp baking powder
  • ¾ tsp baking soda
  • ½ tsp salt
  • 2 eggs
  • ¾ cup Astro Plain Yogourt
  • ¾ cup Beatrice homo milk
  • ¼ cup Lactantia salted butter, melted
  • ¾ cup honey
  • ½ cup Lactantia salted butter
Preparation
  1. Shred three-quarters of the Black Diamond Medium Cheddar; dice remaining quarter and set all aside.
  2. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. Stir in grated cheese.
  3. In small bowl, lightly beat eggs; stir in yogourt, milk, and butter.
  4. Add yogourt mixture all at once to dry ingredients; stir just until moistened (batter will be thick).
  5. For each pancake, spread 1 heaping tablespoon of batter in a hot, lightly greased frying pan. Cook over medium heat until bubbles appear in the surface. Turn and brown underside.
  6. Pour warm honey butter over each serving and garnish with diced cheese.
  7. Combine honey and butter in a small saucepan. Cook and stir over medium heat until butter is melted and sauce is hot.
