Favourite Leek and Cheddar Quiche (Illustration)

Leek and Cheddar Quiche

Ingredients
  • 2 pie shells
  • 5 large eggs
  • 2 cups Lactantia milk or 15% cooking cream
  • 1 pinch cayenne pepper
  • 2 cups Black Diamond® Medium White Cheddar, grated
  • ½ lb ham, diced
  • 1 cup leeks, chopped and blanched in boiling water for 5 minutes
  • salt and pepper to taste
Preparation
  1. Preheat oven to 375°F.
  2. In a bowl, lightly whisk eggs, cream, ham, and leeks with a fork. Add salt and pepper to taste.
  3. Pour egg mixture in pie shells, filling up to the ¾ mark, and top with grated Black Diamond® Medium White Cheddar.
  4. Bake for 20-30 minutes.
