Jacked Potato Bake

Ingredients
  • 8 slices of side bacon, coarsely chopped
  • 2 lbs baking potatoes, peeled and cut into ½“ slices
  • 1 large onion, chopped
  • 1/3 cup green pepper, diced
  • 1/3 cup sweet red pepper, diced
  • salt and pepper to taste
  • 175 g Black Diamond Monterey Jack, shredded
Preparation
  1. Preheat oven to 350°F.
  2. In large frying pan cook bacon until crisp; drain, reserving 1 tbsp of drippings.
  3. Cut potato slices into ½” cubes.
  4. Combine bacon, potatoes, onion, green and red peppers, and reserved bacon drippings in 2-quart shallow rectangular casserole. Sprinkle with salt and pepper and top with Black Diamond Monterey Jack.
  5. Cover with foil and bake for 1 hour or until potatoes are tender.
  6. Remove foil and broil until browned and crisp.
