4 tsp fresh coriander and green onion, finely chopped
Preheat oven to 300°F.
In a medium bowl, combine flakes of ham and salsa. Divide mixture between 4 tortillas and top each with roasted red peppers, jalapeno peppers, and 2 Black Diamond Light Cheddar Slices. Cover with remaining tortillas.
Place filled tortillas on baking sheet and put in oven for 10 minutes or until cheese melts and tortillas are heated through. Cut each quesadilla into 4-6 wedges and serve with dipping sauce.
For the sauce, combine mayo, sour cream, lime rind, lime juice, coriander, and green onion in a bowl and set aside.
