Grilled cheese with Monterey Jack, bacon and jalapeno caramlized onions

Ingredients
  • 4 thick slices of whole grain bread
  • 4 tbsp butter
  • 2 cups onions, sliced
  • 1/8 tsp salt
  • 1/2 tsp granulated sugar
  • 2 tbsp pickled jalapeños, chopped
  • 6 bacon slices, cooked
  • 1/2 cup spinach, wilted
  • 120 g, 4 slices Monterey Jack cheese
Preparation
  1. Preheat oven to 375F
  2. Caramelized onions: In a large non-stick pan on medium-high heat, melt 2 Tbsp of butter.
  3. Add in the onions, salt, and sugar, and sautée for 20 minutes or so, stirring often.
  4. Add in the pickled jalapenos, and set aside.
  5. Sandwiches: Brush the outside of each slice of bread with the remaining 2 Tbsp of butter.
  6. On the dry side of two of the pieces of bread, spread 2 Tbsp of the caramelized onion mixture, top with three pieces of bacon, 1/4 of spinach and followed by 4 square slices of cheese.
  7. In a non-stick pan on medium heat, sear both sides of the sandwiches.
  8. Place on a parchment lined baking sheet and bake for 4-6 minutes, until the cheese is nice and melted.
