Gouda Meatloaf with chimichurri sauce

Ingredients
  • 454g Lean ground beef
  • 1 tbsp dried Italian spices
  • 1 egg
  • 3 tbsp Parsley, chopped
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1/4 cup ketchup
  • 1 cup seasoned bread crumbs
  • 1 cup + 1/2 cup Gouda, grated
  • 1/4 cup Parsley, chopped
  • 1/4 cup cilantro, chopped
  • 2 garlic cloves
  • 3 tbsp red wine vinegar
  • 1 tbsp dijon mustard
  • 4 tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper
Preparation
  1. Preheat your oven to 375F
  2. In a food processor, blend together all ingredients for the sauce and set aside.
  3. In a second bowl, mix together 1 cup of grated gouda with the remaining ingredients until well combined.
  4. Place meat mixture in a loaf pan and bake in the oven for about 35 minutes.
  5. Top the meatloaf with remaining 1/2 cup of grated cheese and continue baking for 5 more minutes, until nice and melted.
  6. Serve meatloaf with mashed potatoes and drizzle with sauce.
