Favourite Extra-Old Cheddar Crêpes (Illustration)

Here’s a crêpe that shouldn’t be thought of as just breakfast; you can roll them out for lunch or dinner too.

Extra-Old Cheddar Crêpes

Ingredients
  • Batter
  • 1 small bottle of beer
  • 1½ cups all purpose flour
  • ½ cup Black Diamond Mild White Light Cheddar, grated
  • 4 eggs
  • 1 tbsp honey
  • Filling
  • 1 Granny Smith apple, minced
  • 1½ cups Black Diamond White Extra Old Cheddar, diced
  • 4 slices of Black Forest ham
  • 6 tbsp butter
  • 6 tbsp flour
  • 3 green onions, minced
  • 3 cups milk
  • 1 pinch nutmeg
  • salt and pepper to taste
Preparation
  1. In food processor, combine all batter ingredients. Blend on high for about 1 minute. Set aside in a bowl.
  2. In a saucepan, melt butter over medium heat and sprinkle flour while stirring until smooth. Gradually add 1 cup of milk in a drizzle, stirring continually. Add green onions and cook for 1 more minute while stirring. Let thicken. Gradually add remaining milk in a drizzle, followed by Black Diamond White Extra-Old Cheddar, nutmeg, salt, and pepper. Stir until smooth and creamy. Set aside.
  3. In a non-stick skillet, melt a little butter over medium heat, then pour a ladle of batter. Cook 3-4 minutes on each side. Set cooked crêpe aside and keep warm. Usually, adding butter is not necessary to cook other crêpes. Repeat procedure until there’s no more batter.
  4. Fill crêpes with apples, ham, and cheese sauce. Roll crêpes and top with more cheese sauce.
