Favourite Cheddary Cauliflower Cracked Peppercorn Soup (Illustration)

This wonderful cauliflower soup will warm your cockles with a spicy kick of black peppercorn and the comfort of cheddar cheese.

Cheddary Cauliflower Cracked Peppercorn Soup

Ingredients
  • 2 tbsp Lactantia salted butter
  • 1 cup green onions, sliced
  • 5 cups cauliflower, coarsely chopped
  • 2 10 oz cans condensed chicken broth
  • 2 cups Beatrice 2% milk
  • ¼ cup all purpose flour
  • 1 cup Black Diamond® Medium White Cheddar, grated
  • cracked black peppercorns to taste
Preparation
  1. In a large saucepan, melt the butter. Add onions and cook over medium heat for 2 minutes, stirring continuously. Add cauliflower and chicken broth and bring to a boil.
  2. Reduce heat; cover and simmer for 12 minutes or until cauliflower is tender.
  3. In a bowl, combine milk into flour until smoothly combined. Add this mixture to the saucepan. Cook and stir over medium heat until mixture boils and thickens. Remove from heat; add grated Black Diamond® Medium White Cheddar and stir until cheese is melted.
  4. To serve, sprinkle each bowl with cracked pepper and additional cheese, if desired.
