Mild White Cheddar Verrines

Ingredients
  • 2 avocados, peeled and pitted and cut into strips
  • 8 smoked salmon slices, cut into strips
  • 3 oz mesculin (spring greens)
  • 10 red basil leaves, minced
  • 2 mandarin oranges, peeled
  • Vinaigrette
  • 2 cups Astro Original Plain 2% Yogourt
  • 4 oz Black Diamond Mild White Cheddar, diced
  • 1 tbsp Dijon mustard
  • 4 tbsp lemon juice
  • 4 tbsp olive oil
  • 4 fresh dill branches, minced
  • 2 tsp capers
Preparation
  1. Mix together all vinaigrette ingredients.
  2. Using four verrines or serving bowls, layer ingredients in the following order beginning at the bottom: mesculin, smoked salmon, avocado, mandarin wedges. If the verrine is high, repeat layers.
  3. Pour in the vinaigrette drenching the layered ingredients.
  4. Garnish with red basil leaves and serve.
