Apple Cheddar Caramel Tart

Ingredients
    Dough
    • 1.5 cups All Purpose Flour
    • 1/4 cup granulated sugar
    • 1/2 cup Lactantia unsalted butter, room temperature
    • 1 large egg
    • 1/4 tsp cinnamon
    • 1/4 tsp salt
    Filling
    • 1 cup Apple Sauce
    • 1/4 cup Dulce de leche
    • 3/4 cup (75g) Black Diamond Extra Old White Cheddar, grated
    • 3 Granny Smith Apples, peeled and cut into 12 wedges
    • 1 Tbsp Lactantia unsalted butter, cold, cubed
    • 3 Tbsp white sugar
    • 1/4 tsp nutmeg
    • 1/4 tsp cinnamon
    • 1 Tbsp cornstarch
    • 3 Tbsp icing sugar
    • 1/2 cup Black Diamond Extra Old White Cheddar, grated
    Preparation
      Dough
      1. Preheat your oven to 400F.
      2. In an electric mixer, fitted with the paddle attachment, mix the Lactantia unsalted butter with the sugar until well combined.
      3. Add in the beaten egg and continue mixing until combined. Scrape down the sides of your bowl.
      4. In a separate bowl, stir together the flour, salt, and cinnamon.
      5. Slowly add the flour mixture to the mixer and mix until combined.
      6. Form dough into a disc and cover with saran wrap in the fridge for 30 minutes.
      7. Roll out dough on a lightly floured surface, until it is about a 13” circle and then place it into the tart pan using the rolling pin as a lifter.
      8. Press the dough in a 9” removable bottom tart pan evenly and then press off the excess dough. If the dough cracks, use excess dough to fill patches.
      9. Let the dough chill for 30 minutes in the refrigerator.
      10. Once the dough is chilled, dock it with a fork and, using pie weights on parchment paper, cover the dough and par bake for 15-20 minutes.
      11. Reduce the oven to 350F, remove weights and parchment and finish baking the dough for another 5 minutes.
      Filling
      1. In a non stick pan on medium heat, melt the Lactantia unsalted butter.
      2. Add in the apple slices and toss gently with the sugar, cinnamon, and nutmeg.
      3. Cook on the stove until the apples start to soften and then set aside to let cool.
      4. In a microwave-safe bowl mix the apple sauce, and Black Diamond Extra Old Cheddar cheese and microwave for 30 seconds or until incorporated.
      5. Add in the dulce de leche and the cornstarch and mix until smooth.
      6. Evenly spread the caramel mixture on the bottom of the cooled tart shell.
      7. Place the cooled apple slices in a nice circular pattern starting from the outside and working your way in.
      8. Bake the tart on a cookie sheet, in the oven for another 20-25 minutes until apples are cooked through and cheese is melted.
      9. Mix the remaining 1/2 cup of Black Diamond Extra Old Cheddar cheese and the icing sugar and sprinkle over the tart.
      10. Broil carefully for 3-4 minutes until cheese is melted and slightly caramelized.
      11. Allow tart to cool slightly and serve warm.
