A cool tall glass of clamato juice helps highlight the flavours of a nice monterey jack cheese.
When assembling a cheese tray, take 2 or 3 varieties of cheese – like cheddar, mozzarella, and Monterey Jack – and arrange on a platter with fruit and crackers.
Serve ripened cheeses at room temperature because cold can mask their flavours. To temper cheese, remove it from the refrigerator 30-60 minutes before serving, depending on the hardness of the cheese. Leave the cheese in a fresh, well-ventilated area and cover with a damp towel or plastic wrap to prevent drying.

The sharpness of old or extra old cheddars pair quite nicely with the slightly bitter taste of coffee.
